Executive Chef Reporting to the Director of Food & Beverage, the Executive Chef is responsible for all kitchen and stewarding operations, including the overall growth in all areas of guest satisfaction and colleague satisfaction. The successful candidate will continue to improve food quality and offerings that will add to Fairmont Hotel Vancouver’s reputation as a recognized Food and Beverage destination. This position will require a ‘hands on’ approach providing coaching and guidance to all leaders and colleagues in the kitchen. In addition, the Executive Chef will be an ambassador for Fairmont Hotel Vancouver and will be involved in interviews and cooking demonstrations with various clients & media outlets. Summary of Responsibilities: Reporting to the Director of Food & Beverage, responsibilities and essential job functions include but are not limited to the following: Directly responsible for all kitchen and stewarding colleagues and managers Directly responsible for the operation of all kitchen and stewarding areas in regards to guest satisfaction, employee engagement, health & safety and shareholder return, Ensure that all kitchen operations are compliant with legislated food safety regulations as well as Ecosure and Accor Hotels Food & Beverage service standards Responsible for attaining food cost and revenue goals by overseeing ordering, inventories and food controls for the entire division Work with Receiving and food supply stores to ensure proper delivery (and quality) of all food items Assist in the annual planning of the F&B budget as it pertains to the kitchen (food cost, labour cost, average check etc.), as well as implementation and regular monitoring of the budget/forecasts Work with Sous Chefs to ensure that the weekly productivity forecast is completed accurately and in a timely fashion Source local ingredients for seasonal food items Develop menus for all food operations ensuring that they are created using guest feedback, industry trends, competitive intelligence and seasonal offerings while ensuring all Fairmont service standards are met. Menus are to be changed frequently to ensure relevance and competitive advantage. Ensure all menu items are costed accurately Be an active member of the F&B operation committee meetings; be an active member in the hotel leadership group meetings. Ensure that work on the kitchen action plans for Colleague Engagement and Guest Satisfaction remain the focus for the kitchen team Liaise with all departments to ensure that there is clear communication and understanding and positive relationships between the departments and the kitchen (Events, Accounting, Talent & Culture, Engineering, etc) Ensures Heart of House is clean and well maintained Own & maintain effective preventative maintenance program for all kitchens Is responsible for the operations of the colleague restaurant (Chattery) including cleanliness and food production Is responsible for all recruiting and retention initiatives in the kitchen and stewarding departments Will be an active member on the hotel committees as required to help support hotel goals Will be active in the local community as well as front of house Will be required to work a variety of shifts, including evenings and weekends Other duties as assigned Executive Chef Reporting to the Director of Food & Beverage, the Executive Chef is responsible for all kitchen and stewarding operations, including the overall growth in all areas of guest satisfaction and colleague satisfaction.
